For me, Frasier is something that I watch everyday.
I DON'T skip episodes. Even when there is a character that irritates me (like Ann or Simon) I watch the whole thing because they should irritate the audience, this is a part of their character.
I am saying all this to tell you this question is really hard because I love Frasier unconditionally.
What I chose as top 10 are actually my ten top 1s. If I had the chance to make a playlist of 10 episodes that I like to watch and shuffle them while watching, those ten episodes are what I want. I will give a brief reason for each one of them:

1. Lilith my 6th favorite actor after the main cast. I love her! She's weirdly funny. The way she came back to the show was hilarious. I mean who thought Lilith will call him on his show ! Another great quote from that episode:" after several hours of careful delaboration and weighing all the consequences, I decided to be playful".
2. Niles and Frasier open a restaurant together! God what a great idea! I like the Daphne-eel scene sooo much.
3. I'm going to say one word.
Daphne: "Sure".
4. Three cranes and one piano. Wow.
Martin singing !
5. I liked all the episodes with Kate. She's my second favorite KACL manager, Kenny is number 1.
6. Great performance for all of them.

Gill was great too with his boyhood speach.
7. This episode makes me laugh out loud. Really loved it.
8.I liked Dr. Mary okay? Okay.
9. This episode contains all kind of emotions. It make you cry, laugh, and think. They can do serious emotional faces! Great actors.
10. This come with Don juan in hell. I like the scenes when they discuss Frasier's personality. Why is he like that? Why can't he be happy? Why can't he commit?
Oh God. I already chosed ten but I have some more!

Watched these episodes a dozen times and they still leave me hungry:
strong story telling, all problems resolved in 20 min. - and "Oh dear god", can they argue !!!
10.) Frasier's 11th season, IMO, is great; however, this episode about a hilarious 'houseguest from hell' is one of my favorites of all-time! 9.) A must-see for fans of "Cheers!" Seeing Cliff Clavin tell "little known facts" to Daphne is almost as funny as Niles' reactions. 8.) IMO, no sitcom did farce in which situations go from bad to worse better than Frasier - and although "The Ski Lodge" is a close 2nd for me re: this type of episode, the high stakes here make this one my #1. 7) Watching Frasier turn a simple instruction - compose a jingle for the radio show - into a huge, complex task, featuring a full orchestra and chorus... One of the best episodes of all-time! 6.) Will Maris become "the Barracuda's" "especial lady..?" LOL! The gang's cruise to Alaska is one of those episodes that never gets old. 5.) Cheers's Diane Chambers and Lilith Sternin make hilarious appearances as the 'stars' of Frasier's psyche. 4.) IMO, maybe the best guest star episode - a prude-acting Dr. Nora (Christine Baranski) is put in her place by her mother (Piper Laurie,) who reprises the pure crazy she showed in "Carrie." 3.) The entire ensemble cast at its funniest! LOL at Gil Chesterton's "boyhood in Surrey." 2.) Frasier didn't do black comedy too often, but when it did, it did it REALLY well. 1.) Lilith's back, and there's farce, drama, surprise -- everything that Frasier did so well!
